I know! I know! It's been a while since I have blogged! I have been busy with the end of the school year. Here's what I've been up to over the past several months:
I have also started a new eating plan. I am using the "Cook Yourself Thin" cookbook from the show on Lifetime. Here are 2 things I made (I forgot to take pictures of the first 3 recipes I tried).
Southwestern Turkey Burgers with Sweet Potato Fries
I don't know why I even tried this recipe. I hate turkey and sweet potatoes are pretty low on my list of foods I liked. I don't think I will make this one again.
I substituted strawberries for the raspberries. This was absolutely delicious! And not too bad for my first attempt at meringue. I will definitely add this to my repertoire.
Tonight I am making Skinny Down-Home Chicken Pot Pie.
Hopefully since I am off work for the summer, I will be able to blog more and document my cooking and knitting!
